
I was copying this recipe into my notes so I'll paste it here too. I thought she had a version of this online but I guess not. This is from the small batch cookbook "Comfort and Joy" by Christina Lane.
Easy Stovetop Mac ’N Cheese
Yield - Makes 2 servings
1 1/2 cups dried elbow macaroni 3/4 cup + 2 tablespoons milk, divided 1 tablespoon all-purpose flour 1 cup freshly grated Muenster cheese 1/4 cup freshly grated sharp cheddar (I didn’t have Muenster, I used all cheddar) Salt Freshly ground black pepper
In a 2-quart saucepan, bring plenty of water to a boil for cooking the macaroni. Once boiling, add a big pinch of salt, and cook the macaroni according to the package directions. Drain and set the same pot back on the stove.
Lower the heat under the pot to medium, and add 3/4 cup of the milk.
In a small dish, vigorously whisk together the remaining 2 tablespoons of milk and the flour.
Once the milk is simmering in the pan, add the flour mixture. Bring to a simmer again.
Add the grated cheeses to the pot, and stir until melted.
Finally, pour the macaroni back into the pot. Taste and add salt and pepper to your liking.
